怎样挑选山竹

　　1、看颜色：挑颜色深紫、外壳光洁，颜色新鲜的，果壳微软有弹性，果蒂绿的，一般都比较好。

　　2、看果蒂：果蒂就是山竹果实连接山竹枝的那里，颜色越绿说明越新鲜，如果颜色变褐色或者变黑，说明这个山竹放置时间太长了，有可能腐烂变质了。

　　3、捏果壳：果壳应当是比较软，有弹性，轻压之后能迅速恢复，说明是新鲜的。如果太硬，捏不动，则是太老或风干了，不新鲜了。如果太软，则可能被泡了或者腐烂了。

　　4、看萼片：就是山竹的“屁股”，理论上讲，一般有4-8瓣萼片，有几瓣萼片就说明有几瓣果肉，但也不排除例外。而且也并不一定是瓣数多的就好吃，只要是新鲜的，酸酸甜甜都好吃。

　　5、掂重量：两个大小相近的，选择重量重一点的，水明水分多，新鲜，重量轻的，可能是风干了，不新鲜。

How to select good mangosteens?

Mangosteen Colors

When the fruit starts to ripen, the rind turns reddish-purple. At this stage, the mangosteen has a sweet and sour flavor and can be stored longer than ripe ones, which has dark purple rind and is sweet.

Mangosteen Stems

Select the fruits that still have fresh, green stems. Dry stems indicate that the fruits are old.

Skin Appearance And Feel

Good mangosteens have firm but flexible rinds.

Avoid the ones with cracks and bruises on the skin, since it's likely they have fallen from the trees, and are generally bad. In addition, bruising causes the skin to harden.

Mangosteens that have smooth, shiny skin have usually been sprayed with chemicals. On the the other hand, fruits with brown stains are often organic and sweet.

Hardened yellow drops on the skin is dried-up sap. They have no negative effect on the pulp. However, if the sap enters the fruit, it often spoils the pulp and makes it inedible. Unfortunately, it's difficult to know before opening the fruit. 

Fallen mangosteens often crack and get bruised. This causes yellow sap to leak out.

Weight

Select fruits that are heavy. Light fruits are often old and have dry meat.

It's a good idea to sample the fruit before you buy it. Fruits from the same batch are usually of the same quality. However, in Thailand it's quite common that different grade fruits are mixed at the markets. Therefore, it's worthwhile to check out several fruit stalls and buy from the best one.
